Yummy Vegie Couscous Salad

From Dianna's Kitchen

Prep Time: 25 minutes Cook Time: 5 minutes
Serves: 7 (1-1/2 cups each)

1 package Couscous original-plain
3 Tablespoons olive oil
2 Tablespoons lemon juice
1 Tablespoon sugar or honey
1 teaspoon Italian Seasoning
salt & pepper to taste
2 large tomatoes, chunked
2 small zucchinis, chunked
1/2 cup fresh basil, cut into strips
1/3 cup red onion, chopped
1 cup crumbled feta cheese

1. Prepare couscous.
In medium saucepan, bring water with salt and peopper just to a boil.
Stir in couscous; cover.
Remove from heat; let stand 5 minutes.
Fluff couscous lightly with fork and cool.

2. In large bowl combine lemon juice, olive oil and sugar. Add tomatoes, zucchini, basil and red
onions. Fold in prepared couscous and chill 4 hours.

3. Stir in feta cheese just before serving.

You Are What You Eat!

I found an interesting devotional by Leif Hetland
and agree with it.

Eating a hamburger doesn't make you a cow!
But, wouldn't you agree that the components
of what you eat become part of your physical body?

There is truth to it with your spiritual man as well.
It would be naive to think that what you feed your
spirit doesn't affect you.

WHAT ARE YOU FEEDING YOUR SPIRIT?
"You Are What You Eat!"

Lord, help me be selective in my eating habits,
sensitive to the Spirit in where and how much I eat.

Spiced Pecan Strawberry Salad

Recipe from Dara Singleton's Kitchen, Waukee Iowa, USA - Church Planter

Spiced Pecans:
1/4 cup Sugar
1 cup warm water
1 cup pecans

1. Soak pecans in the above syrup for 10 minutes.
2. Drain and discard the syrup.

Combine:
2 Tablespoons Sugar
1 Tablespoon Chili Powder
1/8 teaspoon ground red pepper

1. Toss the above seasonings with nuts.
2. Bake 30 minutes at 350- turning very often.
3. Serve with Green leaf Lettuce or your choice of baby greens, thinly sliced red onions, sliced strawberries, and balsamic vinaigrette.

Balsamic Vinaigrette:
1 pkg of Good Seasons Italian Dressing Mix
Follow Pkg instructions replacing the regular vinegar for balsamic.
Then add at least 1/4 cup of honey and vigorously shake to combine!

***I could eat my weight in this salad! Its delicious!
